WHERE KENSINGTON PRIDE MANGOES ARE GROWN Hint: It's warm up here! Kensington Pride mangoes are grown by farming families throughout Australia's tropical north. The Kensington Pride mango season begins in Darwin (NT) each year, bringing with it a taste of summer long before the beach umbrellas go up. The season then continues in the Katherine (NT) and Kununurra (WA) regions, then on to Queensland's Townsville, Cairns, and Mareeba, before heading south to Bowen. The ideal growing conditions and geographical spread of growing regions means that Kensington Pride mangoes are in abundant supply and excellent quality from early September through until December. MEET OUR GROWERS KENSINGTON PRIDE MANGOES AND BOWEN MANGOES ARE THE SAME VARIETY Yep. You learn something new every day! So WHAT is a Kensington Pride mango? Delicious, obviously, but they’re also commonly referred to as the ‘Bowen mango’… plot twist, Bowen mangoes and Kensington Pride mangoes are the same variety. Kensington Pride is sometimes referred to as the ‘Bowen' or 'Bowen Special' mango after the region of Queensland in which the variety was first discovered and popularised. Bowen was known for horse trading in the late 1800s. Traders from India were known to arrive in Bowen with mangoes and spices, which they would give to prominent locals as gifts. It’s believed that the Kensington Pride variety originated from one such gift, crossed with another unknown variety. It was named 'Kensington Pride' after the Bowen property where it was discovered. The Kensington Pride grew rapidly in popularity thanks to its distinctive sweet mango flavour, and deliciously juicy, golden flesh. The rest, as they say, is history.

RECIPES USING KENSINGTON PRIDE MANGOES < Back CHICKEN TACOS WITH MANGO-AVO SALSA Serves: 4 About the Recipe There are a lot of things to love about this recipe. To start with, there’s barely any cooking involved (translation: hard-to-stuff-up). It’s also quick to put together and a winner with the kids. Although tacos can sometimes be overly greasy and cheesy little numbers, this recipe is basically healthy and entirely cheese-free! It’s one of our favourite recipes to enjoy on a hot summer night – particularly when eaten outdoors and shared with friends and family. Ingredients 1 teaspoon garlic powder 1 teaspoon paprika 2 chicken breasts, diced 1 teaspoon olive oil 3-4 radishes, thinly sliced 1 lime, quartered brown rice, blue corn or white corn tortillas Salsa 1 Kensington Pride mango, peeled and diced 1 Hass avocado, peeled and diced 1 red onion, finely chopped 2 tablespoons coriander, finely chopped 1 large red chilli, de-seeded, finely chopped 1 tomato, chopped Preparation Combine garlic powder and paprika with diced chicken pieces until evenly coated. Heat olive oil in a non-stick fry pan and cook chicken pieces for 5 minutes on each side or until done. While chicken is cooking, combine salsa ingredients in a mixing bowl and set aside. Warm tortillas in the oven or a microwave. Top with chicken and salsa. Garnish with radish and a squeeze of lime. Previous Next

HOW TO SELECT, SLICE & STORE KENSINGTON PRIDE MANGOES HOW TO SELECT A MANGO It's not just about the colour... When it comes to Kensington Pride mangoes, colour isn't always the best indicator of ripeness. Some Kensington Pride mangoes can retain a touch of green colouring, even when perfectly ripe. Here's the four key things you should look for when selecting Kensington Pride mangoes. Look for yellow skin, with an orange-red blush. An ideal Kensington Pride mango should have some of this colour, but don't rely on this alone. Colour Smell close to the stem to test for a rich, fruity, sweet and fragrant scent. If it smells amazing, go for it! Scent Gently squeeze the mango. The flesh of a Kensington Pride mango that's ripe and ready to eat should give slightly when gently pressed, but not feel soft or mushy. Touch Look for an ovate, full shape with plump flesh especially close to the stem and beak. Shape HOW TO CUT A MANGO Slice and serve in five simple steps... Rinse then slice through the curvature of the Kensington Pride mango, either side of the pit. Score the flesh, without cutting through the skin. Use a spoon to scoop the mango flesh from the skin. Remove the remaining mango flesh from around the pit. Serve in a bowl, and eat fresh or topped with your favourite yoghurt, cream or ice cream. Or try one of these quick Kensington Pride mango hacks... HOW TO STORE A MANGO Fridge or fruit bowl? It depends... Store your mango in the fruit bowl when... Store your mango in the fruit bowl when it's still ripening. Your Kensington Pride mango is best stored at room temperature out of direct sunlight until it's ripe and ready to eat. Store your mango in a paper bag when... Store your mango in a paper bag when you want it to ripen faster. Adding a banana into the bag with it will further speed things up. Store your mango in the fridge when... Store your mango in the fridge when it's fully ripe. Kensington Pride mangoes should be transferred to the fridge for up to a few days, only when they're ripe and ready to eat. Store your mango in a plastic bag when... You should never store fresh mangoes in a plastic bag. They need fresh air to breathe.

Originally growing tobacco, Alvise and his father decided to diversify in the late ‘70s when the government instituted a buyback scheme, capitalising on well-established mango trees on the property. There are now more than 1000 flowering mango trees including Kensington Pride Mangoes across Alvise’s 70-hectare mango farm. RECIPES USING KENSINGTON PRIDE MANGOES < Back MANGO PANNA COTTA Serves: 6 About the Recipe Mango Panna Cotta is your new favourite springtime dessert! In-season Kensington Pride Mangoes, honey, and a hint of cardamom star in this creamy treat that’s surprisingly simple to make. Ingredients 2 large Kensington Pride Mangoes 2 cups full fat cream 1 cup full fat milk 1 tbsp honey 1/4 cup sugar 5 cardamom pods, lightly bruised 1 tbsp powdered gelatine 2 tbsp boiling water Fresh blueberries & mint to garnish Preparation Combine the cream, milk, honey, sugar, and cardamom pods in a medium saucepan (we found the Essteele Per Vita 3.8L saucepan was the perfect size), and place on the stove over medium-high heat, stirring continuously. Remove from the heat just as it comes to the boil.In a separate bowl, sprinkle the gelatine over the boiling water and stir until dissolved. Add the gelatine mixture to the pot and stir to combine, then set aside for 30mins to cool slightly. Previous Next

RECIPES USING KENSINGTON PRIDE MANGOES < Back MANGO GRANITA Serves: 4-6 About the Recipe As far as mango dessert recipes go, this mango granita has to be the lightest and coolest way to finish your meal. Serve it with our Mango, Melon and Mint Salad for a fresh twist. Ingredients 2 Mangos – Peeled and flesh chopped 1 cup caster sugar 1 cup water 1 Tbs Lime Juice Whipped cream and mint to serve Preparation Place mango and lime juice in a food processor or blender and puree until smooth. Set aside. In a saucepan over medium heat, combine the water and sugar, stirring until dissolved. Increase heat and bring to a boil. Boil for 1 minute, then stir in mango puree and remove from heat. Pour mixture into a 20cm x 30cm freezer tray and freeze for 1 hour. Whisk, making sure to scrape down the sides. Return to freezer and repeat process 2 more times. After 3rd whisk, return to freezer until firm (3-4 hours). To serve, scrape granita with a fork to create the consistency of shaved ice. Serve in chilled glasses with whipped cream and a sprig of fresh mint. Previous Next

RECIPES USING KENSINGTON PRIDE MANGOES < Back HOMEMADE ACAI BOWL WITH MANGOES Serves: 1 About the Recipe As far as health food crazes go – few have been more popular in recent years than the beautiful, vibrant, exotic and above all – delicious - acai bowl. Acai berries originate from the amazon rainforests and are packed full of healthy antioxidants. Whilst they look amazing on any Facebook or Instagram feed, those suckers can set you back a pretty penny at any popular café – often priced at $12 or more. So, we’ve included our own ‘make it at home’ version to save you from paying top dollar. The best thing about acai bowls is that they taste amazing topped with any seasonal fruit. During summer, we love to serve ours with fresh mango, blueberries and any kind of crunchy muesli. Ingredients ½ cup frozen mixed berry 1 frozen banana, chopped 1 packet acai puree (or 3-4 tsp of acai powder) 3 tbsp. rolled oats 2/3 cups almond, rice or macadamia milk To garnish: ½ Kensington Pride mango, diced ½ punnet blueberries Toasted muesli (Pictured) coconut flakes, bee pollen, goji berries, buckinis, cacao nibs Preparation - Blend mixed berries, banana, acai puree or powder, oats and milk together until thick and smooth - Top with Kensington Pride mango, blueberries, muesli and anything else you want! RECIPES USING KENSINGTON PRIDE MANGOES < Back MANGO HALLOUMI SALAD Serves: 4 About the Recipe Warm Mango Salad Recipe: Mango, cauliflower, coconut and curry rice combine perfectly in this family-friendly recipe developed by Amy Darcy of Eat Pray Workout, using Kensington Pride mangoes grown by Red Rich Fruits. “This is one of my favourite ways to use mangoes early in the season, when it’s still cooler, because it’s a slightly heavier meal. It perfectly combines the fruity tropical mango flavours with comforting and filling chickpeas and curried rice. A beautiful meal to share with your family, celebrating spring!” Ingredients For the Salad 2 Mangoes – pealed and sliced 250gm Halloumi – sliced 3 Cups Baby Spinach leaves 1 400mg Can Lentils For the Mango Vinaigrette 1/4 cup mango puree (from about 1/2 mango) 2Tbs Olive Oil 2Tbs Apple Cider Vinegar or White Wine Vinegar 1Tbs Honey Salt and Pepper to taste Preparation For the Vinaigrette Whisk together all ingredients and season with salt and pepper. For the Salad Fry the Halloumi over a medium high heat until crisp and golden brown.While the Halloumi cooks, layer the baby spinach, lentils and mango in a serving dish. Top the salad with cooked halloumi and drizzle with vinaigrette to serve. Hint: To get the most out of your mangoes, use trimmings from around the pip to make the mango puree for your vinaigrette. RECIPES USING KENSINGTON PRIDE MANGOES < Back MANGO AND CHICKEN NOODLE SALAD Serves: 4 About the Recipe For this light and refreshing mango salad, fragrant poached chicken combines with sweet mango and tangy dressing to make an easy meal the whole family will love. Ingredients 2 mangoes – thinly sliced 2 poached chicken breasts – meat shredded 250gm dried Vermicelli noodles 1 cup Coriander leaves 1 cup mint leaves 1 long red chilli – de-seeded and thinly sliced 4 green shallots – trimmed, thinly sliced ¼ cup toasted coconut (plus extra for garnish) ¼ cup chopped peanuts (plus extra for garnish) 2 limes – cheeks removed. Dressing ¼ cup lime juice 2 Tb Fish sauce 3 Ts soy sauce 1 Tb water 1 ½ Tb brown sugar 1 garlic clove – crushed Poached Chicken 2 chicken breasts 400ml Can coconut milk 5cm piece fresh ginger – thinly sliced 1 stalk lemongrass – bruised and thinly sliced zest of 1 lime 2Tb soy sauce 1Tb fish sauce (optoinal) Preparation For the Poached Chicken Combine all ingredients in a saucepan over medium heat. Bring to a simmer. Reduce heat to low and cook, turning occasionally, for 10 minutes or until chicken is just cooked through. Remove from heat. Set aside for 15 minutes to cool slightly. Transfer to a bowl. Cover with plastic wrap and place in the fridge for 1 hour to chill. Once cool, remove chicken from poaching liquid and shred meat. Combine with 3 Tb of poaching liquid and set aside. For the Dressing Combine all ingredients in a small bowl. Whisk until sugar desolves. Set aside. For the Salad Cook noodles in boiling water for 3 minutes or until just cooked. Drain and refresh under cold water. Combine noodles, chicken, herbs, chilli, shallots, coconut, peanuts, and 2/3 mango. Toss with 3 Tb of dressing until well combined. Place into serving bowls and garnish with remaining mango slices, coconut and peanuts. Serve with lime wedge and remaining dressing on the side. RECIPES USING KENSINGTON PRIDE MANGOES < Back MANGO LEATHER (2 INGREDIENTS!) Serves: 6 roll ups About the Recipe With just two ingredients, this mango leather is perfect for lunchboxes and just like a Roll-Up! Cook time: 2 - 2.5 Hours Prep time: 10 minutes Ingredients 3 Kensington Pride Mangoes - Flesh 1/3 Cup strawberries- Halved Preparation Preheat oven to 80 degrees Celsius. Cut the cheeks of the mangoes around the pip and remove the skin. Using a food processor, place mango flesh and strawberries in and blend to a paste. Try not to have any thick chunks of any fruit! On a lined baking tray, pour the mixture and spread out evenly. Try for 1/2 a cm in height. Leave to bake for 2 hours. Check on whilst baking. When the entire mixture is dry, take out of the oven and leave to slightly cook (so you’re able to roll!) Cut the mango into long strips and begin to roll each individual piece. Store in the fridge and take to work or pack in your kid’s school lunch boxes! Previous Next
